Grilled Salmon with Spicy Remoulade is a delightful fusion of flavors and textures. This recipe combines ingredients that complement each other perfectly, resulting in a satisfying and flavorful experience. 

The salmon is marinated in olive oil, salt, pepper and oregano. The olive oil adds a rich, smooth texture to the salmon, while the oregano brings a fresh note to the recipe. The salt and pepper enhance the fish's flavors, making it a savory delight once grilled. 

The spicy remoulade is a creamy, tangy, slightly spicy sauce that pairs wonderfully with the grilled salmon. The remoulade is made with mayonnaise and spicy brown mustard, which offers a rich and tangy base. Minced garlic and a splash of lemon juice are added, while hot sauce, paprika and chili powder bring a kick of heat and smokiness. The minced baby dill pickle provides a delightful crunch and a touch of acidity, balancing the sauce's richness. 

The grilled salmon, which has a slight char, is paired with fresh vegetables. Slices of beefsteak tomato add juiciness and sweetness, while red onion slices bring a mild sharpness and crunch to the dish.

Directions:

  1. Preheat grill to medium high. Lightly spray grill with cooking spray.
  2. In a medium bowl, combine extra virgin olive oil, salt, pepper and oregano. Marinate the salmon for 30 minutes.
  3. For remoulade: In a medium bowl, whisk together mayonnaise, mustard, garlic, lemon juice, hot sauce, paprika, chili powder and pickles.
  4. Grill salmon 3 minutes per side. Lightly grill rolls for 30 seconds.
  5. To assemble, spread 1 tablespoon of remoulade on bottom half of roll, top with 2 slices of tomato, 1 slice of red onion, 1 piece of romaine, 1 piece of salmon and top half of roll.
