Baked Pancake Breakfast
Start your morning with these fluffy Baked Pancakes. They’re perfect for those who crave a sweet, fluffy and soft breakfast treat in the morning.
To start, preheat your oven to 375°. While the oven is preheating, place butter in a square baking dish and set the dish in the oven. Butter makes the difference in this recipe that separates this from traditional pancakes. Butter gives the recipe richness and a moist texture.
Once the butter has melted in the baking dish, remove it from the oven, and swirl the dish to coat butter evenly.
In a medium bowl, beat together milk, 3 eggs and maple syrup. The next step is adding pancake mix and salt and continue mixing until the batter is well mixed.
Pour the batter into the baking dish and bake for 10 minutes. After 10 minutes, remove from oven and break 4 eggs over the pancake batter. The extra eggs allow the recipe to rise more and give the pancakes more fluffiness.
Return to oven and bake for 10 more minutes or until pancake batter and eggs are set. The last step is to slice the pancakes into squares when you’re ready to serve.

Directions:

- In a medium bowl, beat together milk, 3 eggs and maple syrup. Add pancake mix and salt and continue mixing until well combined and few lumps remain.
- Pour into baking dish and bake for 10 minutes. Remove from oven and break 4 eggs over the pancake batter. Return to oven and bake for 10 more minutes or until pancake batter and eggs are set. Top with cheddar cheese and bake until cheese melts, about 2 minutes.
- To serve, slice pancakes into squares. Fry bacon while pancake bakes to serve on the side.
Tip: This recipe can be prepared with a variety of toppings. If desired, omit the eggs, cheese and bacon and top the batter with fresh berries, granola or dried fruit.
