Ice Cream Truffles - Pumpkin Pie Shake

Taffy Apple Cones
Prep time: 30 minutes
Cook time: 15 minutes
Total time: 45 minutes, plus time to chill
Servings: About 15 filled cones
Creamy, crunchy and satisfying, presented to look like an indulgent ice cream cone!
Ingredients:
- 1 can Sweet Harvest Crushed Pineapple
- 2 cups Baker's Corner Mini Marshmallows
- 1/2 cup Baker's Corner Granulated Sugar
- 1 large Goldhen Fresh Egg, beaten
- 1 tbsp. Baker's Corner All Purpose Flour
- 1 1/2 tbsp. Tuscan Garden White Vinegar
- 1 1/2 cups Southern Grove Dry Roasted Peanuts
- 3 cups fresh Fuji apples, diced
- One 8 oz. container Friendly Farms Whipped Dairy Topping
- 1 jar Baker's Corner Maraschino Cherries
- 15 Benton's Kids Ice Cream Cones or Waffle Bowls
- 1 jar Berryhill Caramel Ice Cream Topping
Directions:
- Drain pineapple and reserve juice. Combine drained pineapple with marshmallows and refrigerate.
- In a saucepan, combine pineapple juice, egg, sugar, flour and vinegar. Cook over medium heat until thickened, stirring frequently.
- Refrigerate until chilled throughout, about 8 hours or overnight.
- To assemble, combine sauce with remaining ingredients and chill at least one hour. Use an ice cream scoop to scoop equal portions of taffy apple on top of ice cream cones or into waffle bowls. Drizzle each portion with about a tsp. of caramel topping and top each with a maraschino cherry.
