Greek Chicken Burger

Yields: 4 Burgers
Herbed chicken burger with loads of veggies.
Ingredients:
- 1 Goldhen Large Egg
- 1 pound ground chicken or ground turkey
- ¼ cup Grandessa Signature Artichoke Quarters in water, drained and chopped
- ¼ cup diced onion
- 1 clove garlic, minced
- 1 teaspoon Stonemill Essentials Oregano
- 1 teaspoon Stonemill Essentials Basil
- 1 teaspoon Stonemill Essentials Parsley Flakes
- 1 teaspoon Stonemill Essentials Iodized Salt
- 1 teaspoon Stonemill Essentials Ground Black Pepper
- ½ cup cooked Rice Bowl Instant Rice
- 1 teaspoon Nature's Nectar Lemon Juice
- ¼ cup minced red pepper
- 4 L'oven Fresh Hamburger Buns
- 1 cup Specially Selected Feta Cheese Crumbles
- 1 cup Little Salad Bar Original Hummus
- 4 lettuce leaves
- 1 cucumber, sliced
- 1 tomato, sliced
Directions:
- Heat grill to a medium-high heat.
- In a medium bowl, beat egg.
- Add ground chicken or turkey, artichokes, onion, minced garlic, oregano, basil, parsley, salt, pepper, rice, lemon juice and red pepper. Mix together until well combined.
- Divide mixture and flatten into 4 equal patty shapes. Refrigerate for 5 minutes.
- Grill for 6-8 minutes per side until internal temperature reaches 165°.
- Meanwhile, lightly grill the buns and set aside.
- Place ¼ cup of feta cheese on top of each burger and continue grilling until cheese is melted and soft; remove from heat.
- Spread hummus on both sides of the buns.
- To assemble: Layer the bottom of each bun with the burger, lettuce, cucumber, tomato and top half of bun.
