Picnic Potato Salad

Update your traditional potato salad recipe with this simple dish.

Ingredients:

  • 1 package Season's Choice Country Potatoes with Green Beans and Mushrooms*
  • 1 tbsp. Burman's Dijon Mustard
  • 2 tbsp. red wine vinegar
  • 1/4 cup Carlini Extra Virgin Olive Oil
  • 1 8 oz. package cherry tomatoes, halved
  • 1/4 cup chopped scallions
  • 1/2 cup edenVale Feta Cheese
  • Stonemill Essentials salt, to taste

Directions:

  1. Prepare country potatoes according to package directions.
  2. Meanwhile, in a large bowl, whisk together mustard, vinegar and olive oil. Season with salt to taste.
  3. Once potatoes are finished cooking, immediately add hot potatoes to vinaigrette.  Add tomatoes, scallions and feta cheese. Toss to combine. Serve warm or at room temperature.
