Baked Zucchini

Cook time: 40-45 minutes
Total time: 50-55 minutes

For a great side or main entrée, this recipe is quick and delicious. This is great comfort-style fare that would be excellent for a fall night.
Ingredients:
- Carlini Cooking Spray
- 2 tbsp. minced garlic
- 1 tbsp. Stonemill Essentials Italian Seasoning
- 1/2 stick Countryside Creamery Unsalted Butter
- 4 tbsp. Carlini Extra Virgin Olive Oil
- 1/2 cup Reggano Parmesan Cheese, divided
- 1/2 cup Priano Romano Cheese, divided
- Stonemill Essentials salt and pepper to taste
- 4 zucchini, thinly sliced
- 3 large tomatoes, thinly sliced
- 1 onion, thinly sliced
- 1/4 cup Happy Farms Mozzarella Cheese
Directions:
- Preheat oven to 350°. Spray a 9” x 13” pan with baking spray.
- Mix the following in a large bowl: minced garlic, Italian seasoning, butter, olive oil, 1/4 cup Parmesan cheese and 1/4 cup Romano cheese, as well as salt and pepper.
- Add the zucchini slices, tomato slices and onion slices to bowl. Mix together.
- Add the mixture of all ingredients into the sprayed 9” x 13” pan (when adding ingredients, reserve a few zucchini slices and tomato slices to layer the top of dish).
- Once the zucchini and tomato slices cover the top of the dish, sprinkle the top with a 1/4 cup of Parmesan cheese, 1/4 cup of Romano cheese and a 1/4 cup of mozzarella cheese.
- Bake for 30 minutes, covered with foil.
- Remove foil and bake for an additional 5-10 minutes or until cheese is bubbly and slightly browned.
